A recipe done in Pictures! Another $5 or less meal to feed a family of 4 or more!

This meal fed my family of four for two days and cost less than five dollars to make! The written recipe is after the pictures. Enjoy!



about a pound of skinless, boneless chicken, cubed



diced tomatoes with green chilies, black beans, olive oil to cook the chicken in
onion, garlic, cumin, cilantro, salt and pepper all to your preferences


cook until no longer pink



stir in canned ingredients




add seasonings

add cooked rice


stir occasionally


cook until the liquid is absorbed

  Isn't my helper wonderful! She loves to help me cook. Plus she loves having her picture taken, so that works out well for me.

So here is a written recipe also. We don't have a name for this one. We just made it up as we went but it turned out pretty good. I guess I'll call it Spicy Black Beans and Chicken with Rice


Spicy Black Beans and Chicken with Rice

Ingredients

  1. about a pound of chicken 
  2. a can of black beans
  3. a can of diced tomatoes with green chilies
  4. olive oil or preferred oil to cook chicken in
  5. rice*
  6. water to cook rice in
  7. your preferred seasonings. I used minced onion, garlic powder, cumin, cilantro, and salt and pepper
  8. You can always substitute fresh seasonings

  • Prep time is however long you take to cut up the chicken. Maybe five minutes for a slowpoke like me. If using fresh onions, garlic, cilantro, etc, the prep time will lengthen of course

  • Cook time maybe twenty to twenty five minutes depending on how long the rice takes. For some reason different brands seem to take different amounts of time for me

Directions

  1. Prepare rice according to directions. I usually start this before I start cutting up the chicken to save time
  2. In a large skillet or whatever you cook in, cook chicken in oil until no longer pink. I like to add a dab of butter to my oil when cooking chicken. It seems to make it taste better. 
  3. If using fresh onions and/or garlic you should add them now
  4. After chicken is done add your canned ingredients, un-drained
  5. add your seasonings, unless using fresh cilantro. you want to add that in the last few minutes of cook time
  6. Add your rice, which should be done by now
  7. bring to a simmer and let cook, stirring occasionally, until liquid is absorbed
  8. enjoy

*I use my daughters drinking cup to measure. I use three of those full of water for one of rice. I think it is about a 10 oz cup. So a cup and a quarter of rice uncooked. I used long grain white rice but any kind would work in this recipe.


For some reason the store brand tomatoes with green chilies seemed really spicy this time around. I like to use RoTel when it is on sale, but this seemed spicier than with RoTel! Or maybe it was the mix of everything. This was the first time we had done this exact recipe. We like to experiment. Sometimes we make something similar to this with ground beef. Every one enjoyed this one! It fed us dinner that night and lunch yesterday! I will definitely make it again. It cost me around $2 for the chicken, $0.89 each for the beans and tomatoes with chilies, I'm not sure for the rice. I think maybe $0.50. I pay about a dollar for a small bag of it. I don't count seasonings and oil because they last me months and it is almost impossible (for me anyway) to figure out how much I use exactly and what each time would cost. I figure pennies probably. So this meal, that fed a family of four for two days, cost me less than $5.00! Even if I added fresh onion and garlic (as I love to do) the cost of this meal would be still be around $6 or less, so it is a great recipe to keep making in my home!
